Not Costco's Taquitos
Don't get me wrong... Costco Taquitos are amazing, but I just felt determined one day to recreate them. You know, because I may be slightly-crazy and I love to recreate store-bought food (like Cosmic Brownies & Zebra Cakes).

TAQUITOS
yield: 20-24 taquitos | ready in 30 minutes
I N G R E D I E N T S
20-24 small corn tortillas
2 cups shredded or chopped chicken
½ cup mexican cheese blend
½ cup cotija cheese
⅓ cup sour cream
¼ cup chopped cilantro
1-2 jalapeños, diced (optional)
½ tsp garlic powder
½ tsp cumin
¼ tsp black pepper
½ tsp chili powder
½ tsp salt
½ cup olive oil
M E T H O D
Preheat oven to 400 F.
Add chicken cheese, sour cream and jalapeño to a mixing bowl with spices and salt (basically all ingredients except tortillas). Mix until everything comes together.
Take 1 tortilla and add 2 tbsp filling-- add filling in a straight line across so you can roll into a taquito shape. Roll into a taquito shape, place a toothpick in the center to ensure nothing falls out & set aside.
Repeat until all of the filling is used, you should have enough filling to make 20-24 taquitos.
Add ½ cup of olive oil to a baking sheet & space out taquitos.
Space out taquitos on a baking sheet and bake for 11-14 minutes until golden brown.
Serve immediately, topped with cilantro, sour cream, salsa, & a squeeze of lime.
** To freeze: bake for 9 minutes at 400 F. Cool completely, then place in a freezer safe container, and freeze for up to 3 months. Heat straight from the freezer starting at step 5. You can also coat/spray them with an oil of your choice-- just make sure they have a good coating for optimal crispiness!
