Gluten Free Chocolate Strawberry Waffles

Every year around the holidays, my family and I get together to have a big brunch gathering. A few years ago we started a waffle-bar tradition. We each bring our favorite waffle toppings and have a great time stuffing ourselves with delicious waffle creations.


Although we won’t all be gathering together this holiday, I wanted to continue this tradition. Thus, with this inspiration, I have created this epic waffle recipe using the amazing chocolate covered strawberries with white crispies from my Edible Arrangements Holly Jolly Village Bouquet.


These are the best chocolate covered strawberry waffles that are so easy & so delicious. They pair wonderfully with fresh fruit, whipped cream, maple syrup, whatever you like!

GLUTEN FREE CHOCOLATE STRAWBERRY WAFFLES

yield: 4-6 waffles | ready in 15 minutes

I N G R E D I E N T S

· 1 cup almond flour

· 1/3 cup coconut flour

· 1/2 tsp salt

· 1 tsp baking soda

· 4 eggs

· 2 tsp vanilla extract

· 1/4 cup maple syrup

· 1/2 cup chopped chocolate covered strawberries

· 1/2 cup chocolate chips


M E T H O D

  1. Combine all ingredients in a large bowl to create waffle batter.

  2. Heat waffle iron & grease with a layer of cooking spray or butter.

  3. Spoon 1/3 cup of batter into waffle iron. Cook until golden & serve with fresh berries, maple syrup, chocolate, powdered sugar…whatever you’d like!

RECIPE NOTES

  • STORAGE: waffles will last 2 weeks in the fridge or 3 months in the freezer. Reheat in the toaster, oven, or microwave until heated to your liking.

  • SHORTCUT: use your favorite pre-made waffle mix like Birch Benders or Krusteaz & add chocolate covered strawberries, chocolate chips, and vanilla extract to make them extra yummy!

  • GLUTEN FREE: you're in luck, these are naturally gluten free :)
